Tahini soup from Agion Oros

Ingredients
  • 1 liter of water (salted)
  • 100 grams medium orzo
  • 100 grams lemon juice
  • 150 grams tahini
  • salt (preferably)
  • pepper (preferably)
  • cumin (preferably)
  • spearmint (preferably)
  • chili flakes (preferably)
Instructions
  1. In a pot boil the water, salt it and then add the orzo.
  2. In a bowl add the tahini, add the lemon little by little and mix with a hand whisk, until you have a thick cream.
  3. Next, in the same bowl add a bit of the water where the orzo is boiling and dilute the tahini, until you have a fluid mixture, without lumps.
  4. When the orzo is boiled, remove the pot from heat and the tahini progressively, while mixing with a hand whisk.
  5. Adjust to your tastes with salt, pepper and cumin. Add a bit of more lemon, if needed.
  6. Finally, cover lid and for 20 minutes, let it cool down and become more gruelly, before you serve it.

  1. When you remove it from heat, the soup might look a bit sparse, but after 20 minutes, it will look like the way it is supposed to look.
  2. You can use rice or another kind of pasta.
  3. For those who love lemon, you can add much more.
  4. It matches great with chili flakes, zest of lemon and fresh spearmint.
