  1. Mix the half of the mayonnaise with the truffle oil and set aside.

  2. Mix the rest of the mayonnaise with the hot sauce and set aside.

  3. Put the slices of cucumber into a bowl.

  4. Put the rest of the ingredients for pickles into a pot. When the sugar melts, pour over the cucumber and set aside.

  5. Cut in half the red onions and add little sugar.

  6. Into a hot frying pan, add olive oil and place the onions, with the inner side, towards the bottom of the pan. Let them caramelize over medium to high heat. When they get brown color, turn them to the other side.

  7. Divide the meat into 4 equal parts of 100 gr. and mold it into patties.

  8. Place the pan over high heat and let it get hot. Add the meat into the pan without pressing on it.

  9. When it’s done on the first side, flip it over and press heavily on it to flatten.

  10. Season with salt and pepper.

  11. When ready, flip over again and add 2 slices of cheddar cheese over the patty. Pour some drops of water into the pan and cover it for 10 seconds, so as to help the cheese melt.

  12. Put the upper side of the burger buns on each patty, so as to become tasty and moist.

To serve

  1. Put truffle mayonnaise on the bottom of the burger bun. Add the tomato and then the lettuce.

  2. Put the first patty, add the hot sauce and pickles.

  3. Put the second patty and the other burger bun. Drive a knife into the burger.

  4. Serve with some onions next to each burger on a chopping board.
