Homemade Greek fish roe dip with tuna of Alonnisos island- taramosalata

  • 120 grams white fish roe
  • 90 grams water (bottled)
  • 82 grams fresh lemon juice
  • 1⁄2 onion (white)
  • 1 spring onion (very small)
  • dill herb (a little)
  • 700 grams sunflower oil (frozen)
  1. Put all the ingredients, except sunflower oil, in a blender.
  2. Beat for 2-3 minutes in high speed.
  3. Add the sunflower oil in a steady stream, until the mixture is completely combined and fluffy.
  1. Refrigerate the sunflower oil for 10 minutes or put in the fridge for 1 hour, before beating. It will help the mixture to be ready more easily and you might need less oil.
  2. Use only bottled or filtered water.
  3. Always use fresh lemon juice.

To serve:

  1. Serve on a coarsely sliced bread.
  2. Spread each slice of bread with taramosalata.
  3. Add tuna, dill herb, fresh pepper, tsitsiravla and sundried tomatoes.
  4. Enjoy along with tsipouro!
