  1. In a deep frying pan, add olive oil, heat it well and sautée the shrimps for 2 minutes, until slightly golden and then remove them.

  2. In the same pan, on medium heat, add the finely chopped vegetables, slightly season them with salt and sweat them until they are dried. You might need to add slightly more olive oil.

  3. Then, add the tomato sauce and slightly burn it.

  4. Add the orzo and ‘’toast’’ it well, until golden and meanwhile lower the heat, for 2 minutes.

  5. Deglaze with ouzo and let it evaporate.

  6. At this point, lower the heat and add the water little by little, using a ladle and stir constantly.

  7. 1-2 minutes before the orzo is ready, add again the shrimps, stir and adjust tasting.

  8. Finally, remove the frying pan from the heat, add the finely chopped stems of parsley and thicken with cold olive oil.

  9. Serve with freshly grated pepper and basil leaves.


  1. Add water, depending on how much you want to boil.
  2. Cold olive oil: Add olive oil in plastic ice-cube trays and place them in the freezer, for 4 hours.
