grams feta cheese
(anthotyro cheese or Cretan tyromalama (Malaka))

zest of lemon
Instructions
Cut the sausages in big pieces.
Put hot water and lemon leaves in a pot and the vegetables, if you like.
Put the sausages in a non stick frying pan. Place it over high heat and sauté, until golden.
Chop the vegetables.
Remove sausages when ready.
Lower the temperature and add vegetables. Season slightly with salt and sweat them, until they wither.
Add orzo and "toast" well, until golden.
Deglaze with wine and let it evaporate.
Lower the temperature and add the water slowly, with a ladle, while stirring.
Add sausages before orzo is ready.
Continue adding water, until orzo is ready.
Taste and adjust to your liking.
Add as much cheese as you like and stir well, until it becomes a slop.
Serve in platter with finely chopped spring onions, smoked paprika, oregano, raw olive oil and some more cheese.
