Pasta with gremolata of parsley, hazelnut and gruyére

  • 240 grams pasta
  • 50-100 grams hazelnut
  • 30 grams gruyére
  • 60 grams parsley
  • 150 grams olive oil
  • 1 tablespoon vinegar
  • 2 cloves of garlic
  • salt (preferably)
  • pepper (preferably)
  • 1 pinch of brown sugar
  • zest of lemon
  1. Boil the pasta in salty water.
  2. Chop and sauté hazelnuts with some olive oil. If they are not peeled, they will become a little more black, as seen in the video.
  3. Mix the gremolata ingredients in a blender.
  4. Put the gremolata into a deep bowl.
  5. Grate half of the gruyére cheese on top of gremolata.
  6. Add the pasta into gremolata bowl and mix well.
  7. Serve in a deep plate, add hazelnuts and grate the rest of the gruyére cheese.
  8. Add some freshly grinded pepper and raw olive oil and bon appétit!
