Traditional Greek New Year’s Eve bread – Vasilopita from Pelion

  1. In a shallow bowl, add leaves of basil.

  2. Boil the water and pour it in the bowl with the basil leaves. Wrap the bowl and either wait for the water to become lukewarm or you can either do a cold bain-maire so you can cool it.

  3. Set your oven at 40℃, on fan (if you have the option).

  4. Slightly grease a large round baking tin.

  5. In the mixer's bowl add water, yeast and sugar, mix very well and wait for about 5 minutes.

  6. Then add the flour, olive oil and the salt.

  7. Knead at the mixer's slow speed for 5 minutes, as long as it takes for the dough to not getting stuck at the mixer's walls.

  8. Keep kneading on your working bench for a few minutes and form a round shape.

  9. Place the florin inside the dough.

  10. Place the dough in the baking tin, wrap it and let it expand for 90 minutes either in the oven at 40℃ or in a warm place.

  11. When it has expanded, remove the bread from the oven.

  12. Set the oven at 190℃, on the resistors.

  13. Grease the bread with the egg yolk.

  14. Using the edges of two forks, create a cross from one edge of the bread to the other. Then you can create whatever shape you like.

  15. Bake for 60 minutes on the resistors, at the oven's middle rack. You might need to bake a little longer or lesser, depending on the oven you have.
