Wash up the beans.

Put the beans into a pot and add 3 litres of cold water.

Boil over high heat for 35-40 minutes, depending on the beans.

When ready, drain and set aside.

Put the rest of the vegetables into a big bowl.

Put the beans into the bowl, add oil, vinegar and mix to combine.

Season with salt and pepper, smoked paprika, cumin and oregano.
