Ingredients
  • 250 grams black eyes peas
  • 1 white onion (chopped)
  • 4 spring onions (chopped)
  • 1 carrot (grated)
  • 1⁄4 bunch dill herb (finely chopped)
  • 1⁄4 bunch parsley (chopped)
  • 40 grams olive oil
  • 40 grams balsamic vinegar
  • salt (preferably)
  • pepper (preferably)
  • cumin (preferably)
  • smoked paprika (preferably)
  • oregano (preferably)
Instructions
  1. Wash up the beans.
  2. Put the beans into a pot and add 3 litres of cold water.
  3. Boil over high heat for 35-40 minutes, depending on the beans.
  4. When ready, drain and set aside.
  5. Put the rest of the vegetables into a big bowl.
  6. Put the beans into the bowl, add oil, vinegar and mix to combine.
  7. Season with salt and pepper, smoked paprika, cumin and oregano.
