  • 70 grams ground coconut
  • 200 grams sunflower oil
  • 320 grams granulated sugar
  • 420 grams fresh orange juice
  • 500 grams self-rising flour
  • sunflower oil and flour for the cake tin
  1. In a shallow bowl add the orange juice, sunflower oil, sugar and mix well with a whisk.
  2. Then add the ground coconut and keep mixing.
  3. Lastly, add the flour in 2-3 increments and homogenize.
  4. Using a spatula, add the mixture in the cake tin.
  5. Bake at 170℃, set on fan, for 1 hour sharp!
  6. Let the cake cool down for 2 hours and then remove it from the cake tin.
