  1. Grease a baking tin with sunflower oil and then place a parchment paper on it, making sure it touches all of its corners. Slightly baste the parchment paper with sunflower oil.

  2. In the mixer’s bowl add the eggs, sugar, vanilla and beat with the whisk, at high speed, for about 8 minutes, until the eggs become fluffy.

  3. Add the flour, cocoa, salt and beat for half a minute, until it becomes a fine mixture.

  4. Add the mixture in the baking tin, flatten it using a spatula, press it to make sure that there won’t be trapped air and then bake in a preheated oven, at 180℃, set on fan, for 9 minutes.

  5. Place a clean towel on your working bench and springle it with a lot of powdered sugar. With soft movements, place the towel on the sponge. Make sure that the side of the towel that is covered with the powdered sugar, touches the sponge. Place a chopping board on the towel, hold with your fingers the baking tin and the chopping board and by doing a single movement, turn upside down the sponge, as seen on the video.

  6. Remove the parchment paper with soft movements.

  7. Slightly sprinkle the sponge with a bit of powdered sugar.

  8. Wrap the sponge with the towel, like a roll, slowly and carefully. Make sure you also wrap the towel in between and then let it cool down.

  9. Add the vegetable cream in the mixer’s bowl and beat, until it becomes whipped cream.

  10. Unwrap the sponge and slightly baste it with the liqueur, using a pastry brush.

  11. Spread half of the whipped cream on the sponge and on top of it grate baking chocolate and zest of mandarin.

  12. Slowly roll the log, using the same way, without letting out a lot of air, but make sure you don’t squeeze it a lot. Next, you can either wrap the whole log, not too tight and place it in the fridge, for at least 1 hour or you can place it on the chopping board and serve it.

  13. Remove the log from the fridge, unwrap it and place it on the utensil you will serve it on (if you chose this way).

  14. Baste the rest of the whipped cream, using a spatula.

  15. Using a fork, gently score the log, as if it’s an actual tree log.

  16. Springle with a bit of cocoa and create around it the decoration of your liking.

  17. Place the log in the fridge for at least 2 hours, before you serve it to your guests, so you can cut it in the correct way.
