Preheat your oven at 200℃, set on fan.

Grease a 24 cm. baking pan.

Add the ingredients of mixture A in the baking pan, except the bananas.

Mix well, so the mixture is spread everywhere and then lay the pieces of the bananas.

Add the sugar, the icing sugar and the phytin into the mixer’s bowl and beat with the paddle, for 5-8 minutes, at medium to high speed.

Melt the bananas’ pieces with a fork and add them in the bowl and beat for half a minute.

Then, add the eggs one by one and continue beating, for a few seconds.

Once you are done beating, remove the mixer’s bowl and add the rest of the ingredients and mix well.

Pour the mixture over the baking pan and bake for 35 minutes, at 200℃, set on fan.

When ready, remove the cake from the oven, let it cool down for 15 minutes and then flip it.

- Attention, the most important thing of this recipe is the bananas. They must be very matured, or even better, they must be very black.
- It would be wise to taste the cake the next day, in order for the flavors to thicken.
