Cut the meat in 3 pieces.

Grease and season with salt and pepper.

Heat a frying pan and cook the meat for 1-1,5 minutes, each side. Add olive oil, if needed.

Allow it to rest.

In another cold frying pan put the spring onions and caramelize.

Remove from heat and season with salt and pepper. Add some thyme if you want.

Put the ingredients for rocket sauce in a hand blender and mix.

Cut the meat in slim slices.
-
Put enough sauce in a plate and place the sliced meat.
-
Cover with spring onions.

Add some more sauce on top and add salt, pepper and lemon zest.

For a festive twist, grind some pink pepper.
