Put the meat in a cold pan.

Cover with water.

Add lemon leaves.

Cut the leeks in big pieces and put in the frying pan.

Turn on the heat and place the frying pan.

When boiling, lower the heat.

Skim off while boiling.

Let the meat drink all the water.

After 30 minutes there will be no water and it will start caramelizing.

Add olive oil and stir to golden.

Add salt and pepper.

Remove from heat and add oregano and lemon zest.

Serve in deep plate with the cooked oil, salt, oregano and some more lemon zest.
