Place an non stick frying pan over medium heat. Add a little olive oil and sauté the sausages.

Add sliced onion, season with salt, pepper and sauté a few more minutes.

Next add cherry tomatoes.

Whisk the eggs very well into a bowl.

Remove the frying pan from the heat, add eggs and stir well.

Place the frying pan over the heat again, add feta cheese and flip sphougato over, to be cooked.

Serve in shallow plate with some cherry tomatoes marinated in olive oil, salt pepper, vinegar and lemon zest.

I added dried marshmallow and mint on top.
